The nose has a a fragrance of figs and ripe melon. The palate is wlel structured with savoriness blanced my sweet spices like vanilla.
The fruit was hand harvested and whole bunch pressed to a mixture of new, one and two year old French oak barriques and puncheons and were allowed to ferment spontaneously using natural yeast.
The wine was stored in the same barrels for 8 months, where the lees were stirred back into the wine at regular intervals to add to the complexity and richness.
