Just like the mythical figure of the mermaid Charà , part woman and part sea
creature, so its namesake wine has two parts to it in separate fermentation and ageing processes: one part in concrete eggs to bring out minerality and another in barriques to lend captivating structure. The result is a complex and dynamic wine able to fascinate and bewitch as did the legendary siren.
Why we love this:
As well as the Chardonnay, they also use the local grape Bianco di Alliandra in the blend. This adds interesting aromatics and a freshness to the wine.

ABOUT THE PRODUCER
More than 3,000 olive trees and a 200 hectares of vineyard surround the castle, in a wonderful situation, favoured by the warm southern sun. The Cellar is beautiful , constructed in the white tufa stones. A spectacular barrel cellar and modern winery complete the property.
The wines are sensitively made offering a unique expression of Salento.
