Anthesis refers to the blossoming phase of plants, and it’s by far the prettiest time of year! This is winemaking couple, Anthi & Matt’s take on organically grown Assyrtiko. Some of the juice was ‘wild fermented’ in Acacia barrels and some was ‘cold fermented’ in stainless-steel tanks, giving it amazing texture as well as freshness. Notes of fresh oyster shell and rock melon on the nose give way to ripe lemon and brioche flavours on the palate.
