Blind summit Bunnahabhain was matured for 11 years and finished in 2 blood tubs for between 6-12 months, both had held rum from a Barbados Rum Distillery. We have not named the distillery on the label as the rum was distilled there but we used our own smaller casks for a short finish to give a balanced Caribbean/Islay Island Malt Whisky.

COLOUR
Light, golden, pineapple juice

NOSE
Toffee apples, sponge cake, beeswax and butterscotch. There’s a little candied pear, fresh vanilla pod, rum & raisin ice cream, salted caramel, worthers original and custard creams…with a hint of a coastal breezy seaspray.

TASTE
A mix of sweet and savoury flavours, Honey glazed ham, fresh green note that balances out some of the savoury cured meat and toast character.

FINISH
Refreshing, little warmth with more wild honey and tropical notes. Very much the exciting, maritime sum of it’s parts.

BLIND SUMMIT

Taking a hands-on approach we taste, source, re-rack, bottle and deliver ourselves. This takes time as there are just two of us, but it’s a rewarding way to stay connected to the whiskies and the people in the industry we love.

THE PROCESS

We source small parcels of whisky, then further mature or re-rack into another cask to add more layers of flavour. The cask selection draws on our collective whisky and wine knowledge.

The labels are the result of local collaborations, working with talented friends and designers to create an original image for each release. The initial image tells a story that is close to us, the artist then interprets that photo into their original design, with a different version appearing on each whisky expression.

Supporting local and small has always been a shared priority, which is why we strive to collaborate with people and businesses in our local Leith community.
