NOSE

Blind Summit Caol Ila 10 YO 1st Fill Bourbon Barrel has gentle maritime smoke with notes of toasted oak, sea salt and sweet maple covered bacon. Baked goods, toffee, vanilla cream and citrus zest add lift and sweetness.

PALATE

Bright and smoky with layers of charred lemon, brine and soft peat. Mid-palate notes of toffee, baked apple and light texture from wine cask meet a warm wave of bourbon sweetness. The finish is long, saline and gently spiced, with lingering smoke and sweet malt.

Matured for it’s first 8 years in refill Bourbon Hogshead // Re-racked April 2024 into our ex-Ben Nevis Saint-Emilion Bordeaux Barrique / Re-racked March 2025 into First Fill Woodford Reserve Bourbon Barrel / Stored on the 14th tier of the Lowland Bond warehouse.

BLIND SUMMIT

Taking a hands-on approach we taste, source, re-rack, bottle and deliver ourselves. This takes time as there are just two of us, but it’s a rewarding way to stay connected to the whiskies and the people in the industry we love.

THE PROCESS

We source small parcels of whisky, then further mature or re-rack into another cask to add more layers of flavour. The cask selection draws on our collective whisky and wine knowledge.

The labels are the result of local collaborations, working with talented friends and designers to create an original image for each release. The initial image tells a story that is close to us, the artist then interprets that photo into their original design, with a different version appearing on each whisky expression.

Supporting local and small has always been a shared priority, which is why we strive to collaborate with people and businesses in our local Leith community.
