The subtle combination of grape varieties gives this blend a fruity freshness around
floral notes. Elegant mouth supported by the finesse of the bubbles.
VINIFICATION
Savoie has always been a region where sparkling wines made from Jacquère and Altesse
were produced. From now on, the production conditions are modeled on those of all
crémants. On the one hand, the quality of the grapes must ensure the purity of the
wines, which involves manual harvesting and an obligation to transport the grapes
without altering the integrity of the berries before they are pressed. On the other hand,
the traditional method, as for Champagne, of second fermentation in the bottle is
becoming the rule. To benefit from the appellation, the harvest must be carried out by
hand and the bunches of grapes placed in perforated boxes. The heart of the press must
be placed in vats for a month, before adding the sugar and yeast during bottling. The
bottles must remain lying for at least nine months before being stirred and then resting
again for three months. An aging period of 12 months is essential so that the bubbles
are completely integrated and give a fine and elegant effervescence.

ABOUT THE PRODUCER
Domaine de Savagny has 45-hectare area of vines located within the Côtes du Jura and Chateau Chalon appellation. These vineyards are nestled between Château-Chalon, the historical heart of the Jura wine region, and Baume les Messieurs, one of the region’s most prized cultural sites. The parcels of vines, planted with Jura’s five grape varieties, namely Chardonnay, Savagnin, Poulsard, Trousseau and Pinot Noir, grow in the Lavigny commune from a clay and limestone-rich soil of a marly composition on low-lying slopes.
The wines and crémants produced by the Savagny domain are frequently awarded medals in the most prestigious of wine competitions.
