Mannochmore 11YO Australian Tawny finish

This one began with a great cask of Mannochmore Single Malt distilled in 2013 and matured 11 years in ex bourbon barrel. Wanting to add something fun from fond memories of Tasmanian distillery visits, it was transferred it to an Australian Tawny Fortified Wine Cask for 6 months. Here it took on a light creaminess, touch of beeswax and a little pine, along with tropical and dried fruit notes.

The resulting whisky has a lovely mix of both cask character and distillate. This one is fun, fruity and balanced. It holds the daytime version of artworks created by Liam Palermo for this Outturn II, which felt a perfect fit for a dram so well suited to a summer day.

“Pineapple, stewed apple, juicy strawberry, marshmallows, oak spice and vanilla pods. On the palate rhubarb and custard with a touch of resin and a little waxy/oily character. Fruity, tropical and smooth.”

BLIND SUMMIT

Taking a hands-on approach we taste, source, re-rack, bottle and deliver ourselves. This takes time as there are just two of us, but it’s a rewarding way to stay connected to the whiskies and the people in the industry we love.

THE PROCESS

We source small parcels of whisky, then further mature or re-rack into another cask to add more layers of flavour. The cask selection draws on our collective whisky and wine knowledge.

The labels are the result of local collaborations, working with talented friends and designers to create an original image for each release. The initial image tells a story that is close to us, the artist then interprets that photo into their original design, with a different version appearing on each whisky expression.

Supporting local and small has always been a shared priority, which is why we strive to collaborate with people and businesses in our local Leith community.
