A very unique, Cider, Rum, Virgin Oak matured, Secret Islay Single Malt. This isn’t from a distillery we’ve released before and we rarely see it available these days.
From a single cask, distilled in South Islay. Initially matured in refill bourbon then transferred to a ex Rum, ex Cider cask before finishing in Virgin Oak.
The unique barrel used for finishing was a gift from our friends at Futtle Brewery in Fife. They had been maturing golden rum in it, however prior to Futtle it had spent some time at Little Pomona in North Herefordshire where it had been maturing natural Cider.
The ex-bourbon Islay Single Malt we reracked into this cask for several months
before a final finishing in Virgin Oak to
round it out.

NOSE
Big funky islay bonfire, white pepper,
pine needles, stewed apples, vanilla pod,
honey, green tea and cinnamon
PALATE
Surprisingly soft, salty, seaweed and
kippers, yellow toffee apples and
rum cake. A big whack of smoke rolls
through a long finish.

BLIND SUMMIT
Taking a hands-on approach we taste, source, re-rack, bottle and deliver ourselves. This takes time as there are just two of us, but it’s a rewarding way to stay connected to the whiskies and the people in the industry we love.
THE PROCESS
We source small parcels of whisky, then further mature or re-rack into another cask to add more layers of flavour. The cask selection draws on our collective whisky and wine knowledge.
The labels are the result of local collaborations, working with talented friends and designers to create an original image for each release. The initial image tells a story that is close to us, the artist then interprets that photo into their original design, with a different version appearing on each whisky expression.
Supporting local and small has always been a shared priority, which is why we strive to collaborate with people and businesses in our local Leith community.
